Beet Root Pickle



We have all seen our mothers and grandmothers talk about the all important root – beetroot. The purplish-red root is a well know antidote for anaemia in many Indian households. With the Romans relying on it to maintain their sexual health to Indians using it to treat conditions like anaemia and fatigue, the humble beetroot has been known to have multiple benefits. Here are some reasons you should include them into your diet.. Here I sharing a tasty recipe of  beetroot.. we all love pickles.. enjoy this tasty beet root pickle...

INGREDIENTS:

1.Beetroot -1/2 kg
2.Ginger -1'' piece
3.Garlic pods -10 nos
4.Green chilly -5 nos
5.Red chilly powder -4 tbsp
6.Turmeric powder -1 tsp
7.Asafetida powder (kayam) -1 tsp
8.Fenugreek powder(uluva) -1 tsp
9.Salt -as required
10.Vinegar -3/4 cup
11.Gingili oil(nallenna) -1 cup
12.Mustard seeds-1/2 tsp
13Fenugreek seeds-1/2 tsp


METHOD:


  1. Peel the outer skin of the beetroot and grate it or chop into small pieces. 
  2. Now heat oil in a pan and sauté the beetroot for some time until cooked.
  3. Heat oil in another pan put mustard and fenugreek seeds.
  4. Chopped ginger-garlic and green chilly nicely.add this mixture to hot gingily oil and sauté.
  5. To this add turmeric,chilly powder ,asafetida powder ,fenugreek powder ,salt ,cooked beetroot ,and vinegar.Store in an airtight container after cooling.

Serve with Rice Enjoy.!!!!
