Quick and easy veg Fried Rice/ Carrot Fried Rice/Carrot Pulav





Hi,
We all know fried rice is a delicious food variety(rice variety)..I always make ghee rice once a week today I think to make fried rice but I have only carrots and green peas.thats not enough to make veg fried rice.. but it can...
yeah simple and quick way... also call this carrot fried rice.. :-)



Ingredients: 

Rice-2 cups (Can use basmati rice or long rice I dont have this time)
Carrots-2 medium grated
Green peas-4 tbsp or 1/4 cup
salt and water as required
Ghee-2 tbsp
Soya sauce-1 tsp
Lemon-1
Cashews-10

Method:

Initially wash and soak rice for 30 minutes.Alsosoak greenpeas for 8 hours .
Cook the rice with green peas,salt and enough water.and drain off water and set aside..
Next step is Heat a heavy bottomed pan .put ghee into it .
Add in cashews  when it goes crispy then add carrots and soya sauce.
when carrot becomes crispy squeeze lemon into it.Adjust salt if needed.
Add now slowly add cooked rice with greepeas. and slowly mix it.
Quick and easy fried rice is ready.Serve as hot with your favourite curry or any side dish...
